Egg-cellent Deviled Egg Salad

In a large bowl, cut eggs into small chunks. Mix next 4 ingredients with the eggs. Top with crumbled bacon and sprinkle with smoked paprika. Serve as a side dish or dip with crackers and chips. Serve on a lettuce leaf for a luncheon with fruit and crackers. Serves 8-10

English Cream Sauce Potato Salad

Cook potatoes in salted, boiling water until tender. Drain and cool. Toss potatoes with onion, celery, peppers, Bacon and half of the parsley. In a separate bowl combine cream fraiche or sour cream with ENGLISH CREAM SAUCE, Salt and pepper. Fold into the potato mixture until well blended. Garnish top with parsley. Serves 6-8.

Steamed Asparagus with English Cream Sauce

Clean asparagus - snap off tough ends. Put in a glass pie plate with just enough water to cover bottom of pan, microwave - covered - 2 minutes for crisp asparagus- add more minutes for tender to very tender.

Heat 1/2 cup ENGLISH CREAM SAUCE on low heat or microwave on "defrost" for 1 minute to heat. When warm stir in juice of 1/2 lemon. Pour over hot asparagus.

Creamed English Peas with Onions

Prepare onions and peas. Combine ENGLISH CREAM SAUCE and cream and heat in sauce pan on low until warm. Add 1/8 tsp. White pepper. Add peas and onions to sauce - heat on low until warm. Serves 4-6.

Taste of Spring Chicken Salad

Soak gelatin in 1/2 cup cold water for 5 minutes. Add to heated chicken stock and mix until dissolved. Set aside to cool. Combine chicken, celery, green onion, parsley, almonds, and salt. Whip the cream to thicken, but not to peak stage. Add the ENGLISH CREAM SAUCE to the cooled gelatin mixture, mix well. Fold in the chicken mixture. Pour into a slightly greased 13x9 pan or individual molds. Refrigerate 8 hours or overnight. Serve on lettuce leaf. Serves 8.

Variations: blue cheese lovers: add 1/2 cup crumbled blue cheese. For a holiday salad add cranberries and pecan pieces instead of almonds.

Combine chicken, celery seed, almonds, salt & pepper. In a small bowl mix ENGLISH CREAM SAUCE with whipped cream or cool whip. Fold in chicken mixture and refrigerate 8 hours or overnight. Serves 4.
